Noticed too that some of the videos are on older JMeter versions, should be 5.3 now (11-22-2020)

JMeter had dome internal optimizations in the past. No major GUI change has been implemented.

Regarding JMeter 2 videos there is one module that contains the videos of JMeter 2, but the report generation process hasn't changed. So, you'd be able to generate the reports the same way, it was in JMeter 2.
